Hainault @ Carmel draws its character from the unique terroirs of the Perth Hills, Bickley Valley, and Carmel, a region renowned for conditions that produce elegant, expressive wines. Our grapes are carefully nurtured and crafted using a combination of traditional and modern winemaking techniques. Each vintage reflects the delicate balance between fruit, structure, and finesse. 2023 CABERNET SAUVIGNON

Made from estate grown Cabernet Sauvignon (90%) and Merlot (10%), this full bodied wine is emphasised with strong berry aromas and followed with blackcurrant and chocolate characters that linger on the palate amongst soft tannins. Matured in French oak for 18 months before bottling in October 2021. This excellent wine will benefit from medium to long term cellaring.

Made from Swan Valley Grenache, this delightful fruity, soft red wine shows subtle berry aromas followed with red currant and spicy notes on the palate. Finishing soft and dry, this lively wine is best appreciated chilled.

Made from late-picked Cabernet Sauvignon and Shiraz, this delicious sweet and smooth wine is laced with fruity jam flavours and has been fortified with brandy and spirit to produce a wonderful after-dinner drink.
2023 SAPARAVI

800 year old, Georgian grape variety with aromas of cherry cola and dark chocolate overtones. The palate is surprisingly zingy from the inherent natural acidity of the grape, with a sour cherry character. The finish has a dusty tannins and is long and dry.

Our 2021 Cabernet Franc is a fine and elegant medium bodied wine that produces distinctive flavours of red and black fruit. The herbal floral notes of violet add freshness and aromatic complexity.
2022 SHIRAZ

Our 2022 Shiraz is a cool-climate Shiraz. Deep ruby in colour the wine is full-bodied with a beautiful balance of blackberry, plum and peppery undertones.
2023 CHARDONNAY

Bottled in September 2023, this dry wine shows citrus blossom on the nose and peach and citrus flavours on the palate. Lightly oaked, this wine will develop with age.

2022 SEMILLION

This wine was fermented in stainless steel and matured in seasoned French oak for 6 months, resulting in a wine that is both soft and complex. A fruity dry white showing apple, grassy and citrus characters, with the sustained mouthfeel coming from the oak.

Made in the traditional method, bottle fermented and late disgorged. A delicate and dry sparkling wine with an intense full fruit bouquet and distinct Pinot Noir characteristics. Creamy bubbles enhance the sustained power of the rich flavours on the palate.
